Discover Le Louis Cyr 2 ans. This cheese celebrates the Bergeron character and the exceptional milk of Quebec's northern terroir. Made from milk from cows fed on dry hay, only our best wheels are selected to age for up to 2 and even 4 years. This long maturation allows the cheeses to develop burnt caramel aromas, a texture that is both brittle and creamy in the mouth, in addition to crystals, a sign of successful and quality maturation. This cheese was named Louis Cyr in honor of the Quebec strongman. A true French-Canadian emblem, it was through lifting dumbbells and breaking records that he made Quebecers understand that they were not small and that they could dream big.
